Cretons Spices mix

Ingredients:
1½ lbs side pork(Essential ingredient) 2½ lbs fresh ground pork shoulder 2½ lbs fresh ground pork flank 1 cup minced onions 2½ tbsp El-Ma-Mia Cretons spices 5 cups boiling water
Preparation:
Preparation of the side pork: Cut the side pork in ¾ inch cubes and slowly melt over medium heat in a frying pan. (do not overheat) Cooking will be complete when the fat stops boiling. The side pork cubes will be lightly golden in color. Using a slotted spoon, remove the side pork pieces and cool. Chop or mash the side pork using a fork. Set suet and drippings aside separately for later use.
Preparation and cooking the Cretons: Stir frequently during cooking. In a large heavy pot, combine the ground pork shoulder & flank and the minced onions, El-Ma-Mia Cretons spices and boiling water. Bring to a boil, simmer 30 minutes. Add the fat drippings and simmer for 2 or 3 hrs. 20 minutes before time of cooking ends, add salt to taste. Put the Cretons in containers and cool well.
These can be made without the side pork: replace by 3/4 lbs of pure lard.
Important: Refrigerate before covering. (Will keep refrigerated 12 days) The Cretons can be frozen but you will have to re-cook them until the boiling point: stir well. Refill containers & cool.
