Roastbeef and Yorkshire Pudding

Roastbeef & Yorkshire puddings
(This is my personal recipe and was tested many times before making it perfect.)

Roastbeef:

For a beef roast (ex: eye of round) about 3 lbs

¼ cup vegetable oil
1 tsp flaked onions
½ tsp chili powder
1 tsp hot horseradish
1 tbsp soy sauce
1 tsp brown sugar
1 tsp dijon or prepared mustard
1 tbsp El-Ma-Mia Beef Rub
1 tsp powdered beef stock
½ tsp powdered chicken stock
½ tsp worchershire sauce
Pepper to taste & ¼ tsp. salt (not too much salt for now)1 to 2 cups of water after an hour.

Preheat oven and roasting pan at 400*F.

Mix all the ingredients in a small bowl. With your hands, rub the mixture all over your beef roast, massaging it all in. Take the pan out of the oven, put the roast in the middle of the panand pour the remaining mixture on top. Put back in the oven and let cook for at least an hour before checking the temperature of the meat. (for perfect medium/ well done beef, your digital thermometer should read at about 140*F) Pour 1 ½ cup of water at the bottom of the pan before you put it back in the oven. Leave uncovered for another ½ hour or so before you check the temperature again.
Use this time to prepare your Yorkshire Pudding batter.
Take the roast out of the pan and put it on a plate and tent with foil paper, and let rest until the Yorkshire Pudding is ready.

Yorkshire Pudding

During this time preheat the oven at 425* and fill the muffin cups with about 1 tbsp of oil in each tin. Place in the oven for preheating.
(see Yorkshire pudding recipe) While the Yorkshire Puddings are cooking, prepare the gravy.

Roast gravy:

2 ½ tbsp white flour
4 tbsp water
Mix together in a jar or plastic container vigorously .

Place the roast pan on an element and bring the juices at the bottom of pan to a boil.Add another cup of water and bring to a boil. Make sure to scrape all the pan to get the flavor into your juice. When boiling hard, while stirring, pour some of the flour/water mixture alittle at a time until desired thickness, let it boil at medium heat for about 1 minute. Ready to serve on the yorkshire pudding.
